Every week, Isla and I have a date at Chipotle just before we pick the big girls up from school. During the holiday break, I was missing our little Chipotle dates. I crave their corn salsa both as a dip and on their chicken tacos!
Fortunately for me, I didn’t have to rely solely on taste to recreate the Chipotle corn salsa. All of the ingredients are listed directly on their website!
Truthfully, it was easy to perfect this recipe to get the measurements of each ingredient just right because I’ve eaten so much of it. I should probably be a little embarrassed about that, but I’m not!

Chipotle Corn Salsa Recipe
The truth is, my Chipotle corn salsa obsession is your gain! I’m not huge on copycat recipes but this is one to savor, because it’s so simple and so amazing.
It’s the perfect medium salsa to enjoy as a dip or on all your favorite tacos, burritos, quesadillas and salads.

Ingredients and Substitutions
- Jalapeños – Fresh jalapeños add a lot of heat to this delicious dip, topping or side dish. Slice in half to scoop out the membrane and seeds before dicing.
- Poblanos – Another delicious pepper to add a little heat to this salsa.
- Cilantro – I’m team cilantro, I love the flavor it adds but omit if you’re on the other team.
- Red Onion – Adds color and flavor. You can substitute white onion in a pinch.
- Corn – Fresh corn cut removed from the cobb provides the best flavor, but you can substitute canned corn if needed.
- Lime Juice – Fresh squeezed lime brings out the bright flavors. You can substitute 100% Real Lime Juice in a pinch.
- Lemon Juice – Again, fresh is best. If you don’t have any fresh lemons on hand you can substitute 100% Real Lemon Juice.
Variations
- Roasted – Use roasted corn and or poblano peppers to mix it up
- Black Beans – Throw in some black beans for a little protein.
- Avocado – Another great way to add in a little protein.

Tips for Juicing Citrus
- The easiest way to squeeze a lime is to start at room temperature, and roll it around to soften it.
- Slice it in half lengthwise. Juice by hand squeezing it until all the juice is released, use a hand-held juicer or the citrus attachment on your mixer.
- On average, 1 lime makes about 2 tablespoons juice, 1 lemon about 3 tablespoons of juice.

- Gather ingredients, chopping to the consistency you prefer.
- Combine all ingredients.
- Refrigerate until serving to allow flavors to marinate.

- Chipotle uses white corn, but when it’s winter in Missouri, I use yellow because it’s what we have available.
